Ingredients

Everyday Olive Oil
2 cups Salt of Ebro Delta
Salt & Herbs Mix for Meat
Bouquets Garnis

At the market
1 11 pounds turkey, neck and giblets removed
1/2 cup butter, melted
2 onions, chopped
4 carrots, chopped
4 celery stalks, chopped
2 fresh thyme sprigs
1 cup dry white wine

Directions

Rub the turkey inside and out with salt and sprinkle outside with salt & herbs mix.

Place it in a large stock pot and cover with cold water. Place in refrigerator and allow turkey to soak for 12 hours or overnight.

Preheat oven to 350°F (175°C). Rinse the turkey, inside and out and pat dry.

Using half the melted butter, brush the turkey. Place breast side down in a shallow roasting pan.

Stuff the turkey with 1 onion, 1/2 carrots, 1/2 celery, 1 sprig of thyme and a bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan and cover with white wine.

Roast uncovered for 3h30 to 4 hours, until the internal temperature of the thigh reaches 180°F (85°C). Carefully turn the turkey breast die up about 2/3 through the roasting time and brush with the remaining butter. Allow it to stand about 30 minutes before carving.

Carve and drizzle with olive oil.
